HOT HONEY.

INGREDIENTS

  • 250g raw honey
  • 2 dried chillies
  • 1 tsp cider vinegar
  • — or —
  • One bottle of SWRM (skip the wait)
  1. 01.Warm 250g raw honey over low heat until it's just pourable. Never let it exceed 40°C — heat kills the raw enzymes that make honey worth using.
  2. 02.Crumble in two dried chillies. Calabrian and arbol both work; skip cayenne powder — it clouds the honey.
  3. 03.Hold at low heat for 8–10 minutes, stirring, until the kitchen smells like a chilli shop.
  4. 04.Off the heat, stir in a teaspoon of apple cider vinegar. It balances the sweet.
  5. 05.Cool completely, then strain into a sterilised jar. Keeps six months at room temperature.

SWRM HOT HONEY PIZZA

The move that made hot honey famous. Salty, spicy, sweet — drizzled over blistered crust and cupped pepperoni.

INGREDIENTS

  • 1 ball fresh pizza dough
  • 80g San Marzano tomato sauce
  • 120g low-moisture mozzarella
  • 60g cup-and-char pepperoni
  • Fresh basil, torn
  • 2 tbsp SWRM Hot Honey
  • Flaky sea salt

METHOD

  1. 01.Preheat oven and pizza steel to 275°C (or as hot as it goes).
  2. 02.Stretch dough to 30cm. Spread sauce edge to edge, leaving a thumb of crust.
  3. 03.Top with mozzarella and pepperoni. Bake 6–8 minutes until the crust is charred in spots.
  4. 04.Off the heat: torn basil, flaky salt, then drizzle SWRM in tight ribbons across the whole pie.
  5. 05.Slice. Drizzle again on the plate.

SWRM HOT HONEY WINGS

Crackling skin, sticky glaze, unforgettable heat. The only hot honey wings recipe you need.

INGREDIENTS

  • 1kg chicken wings, split
  • 2 tbsp baking powder (not soda)
  • 1 tsp fine salt
  • 60g SWRM Hot Honey
  • 30g unsalted butter
  • 1 tbsp apple cider vinegar
  • Flaky salt, to finish

METHOD

  1. 01.Pat wings bone dry. Toss with baking powder and salt.
  2. 02.Rest uncovered on a rack in the fridge for at least 1 hour (overnight is better).
  3. 03.Roast at 220°C for 35–40 minutes, flipping once, until deeply crisp.
  4. 04.Warm butter, vinegar and SWRM in a wide pan until glossy.
  5. 05.Toss wings in the glaze off the heat. Finish with flaky salt.

THE SWRM SOUR

A whiskey sour with a slow-burn tail. Hot honey replaces the sugar and everything gets more interesting.

INGREDIENTS

  • 60ml bourbon or rye
  • 25ml fresh lemon juice
  • 15ml SWRM Hot Honey syrup (see note)
  • 1 egg white (optional, for foam)
  • Ice
  • Lemon peel, to garnish

METHOD

  1. 01.Hot honey syrup: stir 2 parts SWRM with 1 part hot water until fully dissolved. Cool.
  2. 02.Dry-shake bourbon, lemon, syrup and egg white (if using) for 15 seconds.
  3. 03.Add ice. Shake hard for 15 more seconds.
  4. 04.Double-strain into a chilled coupe. Express lemon peel over the top.
  5. 05.Optional: a final micro-drizzle of SWRM across the foam.

FAQ.

What is hot honey?

Hot honey is raw honey infused with chillies. Sweet up front, heat on the back end. Great on pizza, wings, cheese and cocktails.

How hot is SWRM hot honey?

A slow, sitting heat — not a punch. Enough to notice, not so much it drowns whatever you're eating.

How long does hot honey keep?

Sealed at room temperature, at least six months. It won't spoil — honey is a natural preservative.

Can I cook with SWRM directly?

Yes, but treat it like a finishing sauce. High heat destroys raw honey's character — glaze at the end.
